Vegan pizza

Last weekend I had my first pizza in ages.

The dough was made from scratch, in the morning, using flour, dried yeast, salt, water and olive oil and left to rise for the day.

The pizza sauce was made from half a chopped red onion a can of chopped tomatoes, some tomato puree and roughly chopped basil.

It was topped with Redwood Foods vegan mozzarella, artichoke hearts, cracked olives, sundried tomato, sliced flatcap mushroom and basil leaves.

It was beyond incredible, I had the whole thing myself, and is the best thing I've eaten in months.

I may update this later with a picture of the pizza, which I only thought to take after eating half of it.

okay, so the disclaimer here is that this one ain't vegan (it has moo cheese on it), but I was mighty proud.I made three of these.

Made the dough the night before and made sure to put a little fresh oregano and basil in it. Sauce was a mix of tomato puree and salsa (I ended up adding the salsa out of panic because I didn't have enough puree but it ended up being awesome). This one had mushroom, olive and sweetcorn and red pepper (with cheddar and grated haloumi), Una's I think had pineapple too.

Simple but effective. Hadn't made one in ages either.

oh, in the past, when making vegan ones, I actually never use vegan cheese (I can't handle it on pizzas, just doesn't melt right for me), I just use a cheese sauce whipped up from soy milk,mustard,nutritional yeast and tamari, and put blobs of it on the pizza.

I made my first vegan pizza the other day. And it's definitely something I love. That vegan mozzarella cheese is a winner.

Last time I was on holidays, I was with my little vegesaraus friend (vegansaraus just doesn't have the same ring to it!) who's vegan. (Way to state the obvious).

Anyway, we went to this italian place and she was convinced she'd be eating pasta by itself for the night - pasta without eggs, which is extremely hard to get across because I can't speak spanish - when she saw it. I can't remember the name of it, but anyway it was pizza with tomato sauce and oregano. No cheese.

I've never actually seen her happier!
